It has to do with existing organisms adapting to many new micro climates and different conditions in soil, etc.
There's nothing new in this, as it has been well known for hundreds of years that speciation occurs when conditions change and organisms are isolated from the rest of their species.
What is new here is an understanding that this has and does occur when mountains form, as opposed to, say, some organisms being blown adrift on different islands from others of their species as in the Galapagos. And what is also interesting is the great variety of new forms that arise on relatively new mountains.

There are many copycat Halal Guys White Sauce recipes on the internet and I've tried the most likely ones. They weren't close. One had 2 T of lemon juice and that was way too much. Another had parsley and that one came out like tarter sauce. Others were wrong for various reasons.
Here's my own version that I think is pretty close. However, like nature, I never stop tinkering and the next version might leave out the lemon juice and use white vinegar for the acid or a combination of both. If I do try that, I'll let you know the results right here.
My recipe below has the scent, the look, the mouth feel and the flavor just about right. I taste tested the real stuff against this and there's not much difference. However, it wasn't a blind test and I may try that next.
I saw a comment that said if you want your clone Halal White Sauce to taste like the stuff at the carts in NYC, just put it in a plastic bottle, leave it in the hot sun all day on a cart next to fumes from cars and trucks.
CM PRESS RECIPE with a very specific ingredient list of exactly what I used this time:
1 C. mayonnaise (Hellmann's Light Mayonnaise; same as Best Foods on the West Coast).
1/4 C water (Bottled spring water to avoid any chemical flavors).
1/2 T lemon juice ( Stater Bros. Reconstituted). In an earlier version I used fresh from my tree.
1/4 t ground caraway (I hand ground seeds bought at Sprouts bulk).
1/4 t ground sumac(Spicely brand from Mother's Market).
1/4 t ground cardamon (I used from small jar of Sprouts organic Ground Cardamon).
A very small sprinkle of ground turmeric (I used Trader Joe's). Be careful. Keep sauce white.
Ground pepper to taste (5th Season-Walmart). Fresh ground--fine-would be better.
Some recipes call for a pinch of xanthan gum to thicken the sauce, but I don't think it's needed and you usually have to buy a bag of the stuff which should last you 50 years.
You can buy plain squirt bottles at Wal-Mart for about a buck and this is the only way to go in dispensing the sauce which you want to use gobs of on just about everything.
